Try our Homemade Ponzu Sauce for Hot Pot

Ponzu is one of those items you forget to buy. So make it with ingredients on hand. I revised the amount of ingredients.

Ingredients

Depending on the type of soy sauce, it could be too strong. Adjust to taste!
Lemon Ponzu
Soy sauce
4 to 5 tablespoons
Lemon juice (fresh is best, but bottled is okay)
3 tablespoons
Mirin
2 to 3 tablespoons
Sugar
1/2 tablespoon
Kombu for dashi stock (optional)
about 5-cm square
Ponzu without Lemon
Soy sauce
4 to 5 tablespoons
Vinegar
2 tablespoons
Mirin
2 to 3 tablespoons
Sugar
1/2 tablespoon
Kombu to make dashi stock (optional)
about 5-cm square

Steps

1. The type of vinegar (100% rice, rice blend, grain, etc) used will differ. Chose whatever you prefer.
2. Also, this recipe makes a slightly sweet sauce, so for those who don't like it sweet, reduce or eliminate the sugar.
3. Put all the ingredients into a sauce pan, bring to a boil, then immediately remove from the heat. After it cools down, it's ready to be use.
4. For those who are in a hurry, you can serve it without heating. I'm usually pressed for time, so I generally use it as is.
5. For times when you don't have any lemons, just make it without it. It's not too bad. (I'm sure the photo doesn't help much. tee hee)
6. If you don't have any dashi kombu, then leave it out Since this is for times when you're in a bind, just use whatever you have.
