Diamond Cookies

People love it! Nobody can resist! These are crispy cookies.
Anyone would love to receive these as presents.

Ingredients: About 40 cookies

85 g
30 g
Egg yolk
Vanilla extract
2-3 drops
●Cake flour
110 g
●Almond flour
25 g
Granulated sugar
as needed


1. Run the ● ingredients through a sifter. Leave out the butter until it reaches room temperature.
2. When the butter develops a mayonnaise-like consistency, add the sugar and mix well.
3. Add the egg yolk and mix well. Add the vanilla extract, too.
4. Add the sifted ● ingredients and mix lightly with a rubber spatula.
5. Once all of the flour has mixed in, form into one ball with your hands.
6. Divide the dough into half. Roll into 20 cm sticks.
7. Tip: Use cardboard cores from plastic wrap to form the dough.
8. Chill for about an hour in the freezer.
9. Sprinkle granulated sugar on the frozen dough. Slice 1 cm thick.
10. Place on a baking sheet. Bake for 20 minutes in preheated oven 320F/160C.
11. It's very soft just after baking. It will be crispy chilled.
