Spinach With Sesame Mayonnaise

Spinach and mayonnaise match surprisingly well. This is one of the few spinach dishes my vegetable-hating son will eat.

Ingredients: 4 servings

2 bunches (about 500g)
○ Eggs
○ Salt
To taste
● Mayonnaise
3 tablespoons
● Ground sesame seeds
2 tablespoons
● Soy sauce
1/2 tablespoon
Toasted whole sesame seeds (as garnish)
To taste


1. Blanch the spinach, drain, refresh in cold water, and wring out tightly. Cut into 3 cm pieces.
2. Cut the hanpen into 1 cm dice shapes.
3. Heat some oil in a frying pan, and make finely scrambled eggs with the ○ ingredients.
4. Combine the spinach, hanpen, and scrambled egg in a bowl.
5. Season with the ● ingredients. Transfer to serving plates, sprinkle with some sesame seeds, and serve.

Story Behind this Recipe

My son is not fond of vegetables, but I saw him once dipping spinach in the mayonnaise that was on a salad that was also served, and thought that he might eat spinach with mayonnaise. I made this and it was a big success.
