Easy Daikon Radish Kimchi Stock

Easy in a food processor!
Kimchi is tasty, but this is also good.

Ingredients: 1 daikon radish worth

Ingredients for the food processor
Daikon radish
8 cm
Apple
1/2
Onion
1/4
Carrot
1/2
Ginger
1 thumb's worth
Garlic
1 clove
Seasoning ingredients:
Sesame oil
1 teaspoon
White sesame seeds
1 tablespoon
Sugar
10 g
Kombu dashi stock
1 tablespoon
Scallop or bonito dashi
1 tablespoon
Salt
1 teaspoon
Korean chilli pepper (finely ground)
20-30 g
Soy sauce
1 tablespoon
Fish sauce
1 tablespoon
Added before mixing with daikon
Japanese leek
1/2
Chinese chives
1/5 of a bunch (as needed)

Steps

1. Blend the daikon, carrot, apple, onion, ginger, and garlic in the food processor.
2. Here it is mixed.
3. Add the flavouring ingredients to the processed mixture, and combine to complete the daikon radish kimchi stock.
4. Mix the leek and chives in when combining the stock and daikon radish.
