Crunchy Adzuki Cookies

Crunchy Adzuki Cookies

These are crunchy cookies with tsubu-an.
A super simple, foolproof recipe.

Ingredients: fills one baking sheet

Unsalted butter or unsalted margarine
60 g
Granulated sugar
10 g
Condensed milk
20 g
40 g
Cake flour
100 g

1. Soften the butter, either by leaving it out at room temperature or microwaving for about 30 seconds. Add granulated sugar, condensed milk and mix well.
2. Once it's become creamy, add the tsubu-an and continue mixing.
3. Pour in the cake flour, and use a rubber spatula to mix into a uniform shape.
4. Wrap it up and roll into a log. Cool for 30 minutes in the freezer.
5. Remove the wrap and slice into 5 mm pieces. Bake in a preheated over at 355°F/180°C for 18-20 minutes.
6. This time I used canned tsubu-an. It was delicious as well. In this case, bake for a bit longer.
7. I also made matcha adzuki cookies. Check it out Recipe ID: 1624407

Story Behind this Recipe

I was thinking of ways to use tsubu-an. I randomly tried making cookies and it came out pretty good.
