Crispy Matcha & Adzuki Cookies

Crispy Matcha & Adzuki Cookies

These are crispy cookies flavoured with a combination of matcha and adzuki.
The subtle taste and aroma of green tea is delicious.

Ingredients: One baking tray's worth

Unsalted butter or margarine
60 g
Granulated sugar
15 g
Condensed milk
15 g
40 g
Cake flour
100 g
3 g

1. Return the butter to room temperature or pop it in the microwave for 30 seconds to soften. Mix well with sugar and condensed milk.
2. Once the mixture is fluffy and creamy, add the tsubu-an and mix well again.
3. Combine the matcha and cake flour, and sift it into the mixture. Gently fold in with a rubber spatula and gather the dough into a ball.
4. Wrap the dough in cling film and roll into a log. Let rest in the fridge for 30 minutes.
5. Peel off the cling film and cut the dough into 5 mm circles. Bake in a preheated oven for 18 - 20 minutes at 180℃.
6. I think the green of the matcha paired with the anko looks cute.
7. This is the anko I used this time, but you could make gorgeous cookies with boiled adzuki beans as well. If you do that though, you will have to bake them for a bit longer.
8. I also uploaded a recipe for plain adzuki bean cookies as well. Recipe ID: 1624439 "Crispy Adzuki Cookies"

Story Behind this Recipe

I thought that matcha and adzuki beans is a nice combination, so I tried making something with them.
