My Mother's Chicken Salad

My Mother's Chicken Salad

This is my mother's recipe. I've loved it since I was little. My father eats celery with pleasure if it's in this salad. Even though it takes a bit of effort I make it after all. It's that kind of recipe.

Ingredients: 4 servings

Chicken tenders
3 to 4
1/2 of an onion
2 stalks
1/2 clove (or use garlic powder)
To taste
Salt and pepper
To taste

1. Slice the onion and celery, and chop up the celery leaves too if you like. Soak both in salted water for about 15 minutes.
2. There's no need to remove the sinew from the chicken since you'll be removing it later. Heat the crushed garlic in oil in a pan, and when it's fragrant, add the chicken and cook on both sides until browned. Season with salt and pepper as you cook. When they are cooked, take them out and cool.
3. Drain the vegetables well.
4. When the chicken has cooled shred them with your hands and mix with the vegetables from Step 2. Flavor with mayonnaise and pepper. Adjust the salt while tasting. Add some mustard or lemon juice to taste.

Story Behind this Recipe

My mother often made this salad for me. My beloved dog Santa always came to the kitchen when he smelled the chicken being cooked with garlic....
