Macrobiotic Sweet Potato Cookies

These super-healthy 'cookies' highlight the texture of the sweet potatoes for a soft, slightly crunchy sweet treat.

Ingredients: about 20 cookies (small)

A
Mashed and steamed sweet potato
1/2 cup
Flour (cake flour)
1/2 cup
Katakuriko
2 tablespoons
Beet sugar
1.5-2 tablespoons
Salt
a small amount
B
Canola oil
1.5 tablespoons
Vanilla essence
1 teaspoon

Steps

1. Put the A ingredients into a plastic bag. There is no need to deflate the air from the bag. Shake well to mix.
2. Add the B ingredients to the mixed dry ingredients from Step 1 and shake again to mix. It will gradually come together to form a dough (do not knead the mixture).
3. Make into a log, and slice into cookies. Bake in the oven at 180℃ for 15-20 minutes.

Story Behind this Recipe

I had a lot of steamed sweet potatoes left over and decided to make cookies out of them. Though I didn't intend it, they ended up having pretty much the same texture as sweet potatoes.
