This is our family's standard potato salad recipe, which features crispy crunchy bacon.
I wanted to make potato salad, but didn't have any ham in the fridge! So I tried using crispy fried bacon instead.
If you drain off the fat from the bacon completely and leave it for a while it will become crispier. If you start cooking the bacon when you start boiling the potatoes, the timing will be perfect.
