Winter Melon & Chicken Simmer, to Enjoy the Taste of Chicken

This simmer gets its light delicious flavor from the chicken broth. My family eats this up to the last drop.

Ingredients: serves about 6

Chicken thigh meat
1 thigh
Winter melon
1/4th
Water
2 cups (400ml)
Sake
2 tablespoons
Mirin
2 tablespoons
Salt
a scant 1 teaspoon
Dashi soy sauce
a scant 1 tablespoon

Steps

1. Cut the winter melon into bite-sized pieces and drain in hot water (This removes the rawness).
2. Cut the chicken into small bite-sized pieces, sprinkle salt and sake (not listed), and rub into the meat.
3. Put the chicken in a pot and heat. Once they've browned, put the winter melon.
4. Add water, sake, and mirin and boil. Once it's come to a boil, add salt and dashi soy sauce.
5. Continue boiling and once the winter melon has reached your desired hardness, it's complete.
