Quiche-Like Fluffy Omelette

If you have any spare ingredients lying around you can make a quick omelette for your bento box or as a side dish This is a creamy omelette made with duxelle, shio-koji minced meat and cheese.


★Heavy cream
50 ml (1/4 cup)
★ Duxelle (Recipe ID: 1592808)
2 tablespoons
★Shio-koji minced meat (Recipe ID: 1557877)
1 tablespoon
★Finely chopped green onion
2 tablespoons
★Parmesan (grated cheese)
3 tablespoons
◎Olive oil
1 tablespoon


1. Break the eggs into a bowl. Beat the egg and then mix in the ingredients marked with a ★.
2. Add the ingredients marked with ◎ to a frying pan over medium heat. Add the egg mixture from Step 1, as if you were making a normal omelette. Shape while gently mixing the contents with some cooking chopsticks in large cutting motions.
3. Use the sides of the frying pan to fold the omelette over into a semi-circle. When folded, turn the heat down to low and flip over.
4. If it's hard to keep the shape of the omelette, switch to using a spatula and cook until both sides are golden to complete.
5. Cut into 6 equal pieces.
6. [About the Shio-Koji Minced Meat] Normal minced meat and minced chicken also taste great in this recipe. You can add in the meat even if it's still frozen, so it's really convenient.
