Put all the ingredients into a bread machine. I used small eggs so you can see 2 yolks. It's best to beat the eggs first and measure out 75 g.
Start the baking course! Let the bread machine do the heavy lifting. Make sure the pineapples are ready before it's time to mix in additional ingredients.
I use this canned pineapple. It has 10 sliced rings. We'll use half of these in this recipe.
Drain off the syrup well.
Cut the pineapple up into easy to eat pieces. Add 2/3 of that when the 'mix in' beep sounds. Poke the rest of the pineapple into the dough when it's starting its final rise.
Here's how it looks cut. The pineapple pieces have become pretty small (and kneaded into the dough).
Story Behind this Recipe
I thought brioche and pineapple should go together, so I made this.
Please drain the syrup entirely. As sliced bread, this paired well with ham. You can use any type of sugar you like. If you use a generous amount of sugar, it becomes snack bread that you can eat as-is. I think adding raisins to the dough should work well too.
