Delicious Kabocha Squash and Spinach Soup

Even kids who don't like veggies will eat this – it's that good!


Kabocha squash
1/2 bunch
1 cup (200 ml)
Hot water
2 tablespoons
Consomme soup stock cube
(if using consomme granules
1 heaped teaspoon)


1. Microwave the kabocha until soft (8 minutes at 600 W).
2. Microwave the spinach until soft (2 minutes at 600W).
3. Add 2 tablespoons of hot water to a pot and dissolve the consomme stock.
4. Cut the kabocha and spinach into small pieces and add to a blender with 100 ml of milk, and purée. Transfer the purée to a pot.
5. Add the rest of the milk to the blender, blend, and return to the pot.
6. If you add the milk in 2 batches it reduces the amount of puréed spinach and kabocha that gets left behind in the blender, meaning less waste and an easier clean-up.
7. Heat the soup in a pot and it's done.
8. If you want to serve it cold, dissolve the consomme in hot water, then mix it with the purée in the bowl.
