My Family's Sesame Dipping Sauce (for Shabu Shabu)

My Family's Sesame Dipping Sauce (for Shabu Shabu)

This sesame dipping sauce has a nice garlic flavor and is delicious. It's also great for dishes other than shabu shabu.

Ingredients: 2 ~ 3 servings

Toasted sesame seeds
5 tablespoons
Minced garlic
1 clove
White miso
3 tablespoons
Ichimi spice
a small amount
Lemon juice
1 tablespoon
1 tablespoon
Soy sauce
2 tablespoons
Vegetable oil
2 teaspoons
1/2 teaspoon
Kombu based dashi stock (※granules dissolved in water)
100 ml

1. Grind the toasted sesame seeds well in a suribachi (Japanese mortar) until the oil comes out and they become moist (Like in the picture.)
2. Add garlic, and continue grinding lightly. Add the rest of the ingredients from the top of the list in order. Mix well and it's done!
3. If the suribachi is too small, when you pour in the dashi stock, transfer the ingredients from the mortar to a larger bowl.

Story Behind this Recipe
