"Family Restaurant" Style Hamburger Steaks with Enoki Mushroom Ankake Sauce

It tastes just like what they serve at "family restaurants" (rather like diners) in Japan. You can use your favorite mushrooms instead of enoki mushrooms...

Ingredients: 3-4 people

Hamburger steaks:
Ground meat
400g
Onion
1/2
Egg
1
Nutmeg
1/2 teaspoon
Salt
1/2 teaspoon
Coarsely ground black pepper
A pinch
Panko
4 tablespoons
Milk
2 tablespoons
Vegetable oil
As needed
Thickened ankake sauce:
Enoki mushrooms
1 bunch
Water
150ml
Dashi stock granules
1/3 teaspoon
Sake
1 tablespoon
Grated ginger
1/2 teaspoon
Soy sauce
3 tablespoons
Sugar
1 teaspoon
★ Katakuriko
1 tablespoon
★ Water
1 tablespoon

Steps

1. Mince the onions.
2. In a bowl, mix the hamburger ingredients (except for the oil), and knead thoroughly.
3. Knead it until it clumps together and the white has disappeared. Let rest for 10 minutes. This step is for making soft hamburgers.
4. Prepare the sauce. In a pot, boil the sauce ingredients for 2 minutes. Combine the ★ ingredients and the katakuriko dissolved in water, and add to the pot to thicken.
5. Shape the meat mixture into a ball and press out the air like you are playing catch, then mold into patties. Heat a pan with oil and brown on both sides.
6. Cover with a lid. The idea is to cook it all the way through, but don't overcook it. The juices will evaporate.
7. Cover with the sauce and serve. I topped it with lots of green onions.

I made these for my daughter who loves Japanese-style hamburgers. She said, "These are just like the ones you can get at a family restaurant so that's where I got the name lol.
