Wash the sweet potatoes. Roughly chop into 5-6 cm long, slightly thin slices.
Put the slices into a bowl and soak in water. Drain.
Put the ★ ingredients into a frying pan and lightly mix together. Spread the ingredients out in the pan (this is to even out the flavor). Put the sweet potatoes on top, cover with a lid, turn on the heat, and steam-cook.
When it comes to a boil, flip the potatoes occasionally (for about 15 minutes).
When you can easily press a skewer through the potatoes, take off the lid. Coat the potatoes with the sauce as the water evaporates.
Transfer to a plate and sprinkle black sesame seeds on top. Enjoy!

I love daigaku imo, so I wanted to make my own version of what I buy at the grocery store. When making it, I didn't want to fry, so I used olive oil and tried various methods until I was satisfied with the result!
If you slice the sweet potatoes too thickly, it takes a long time for it to cook all the way through, so I recommend you cut them long and thin. In Step 4, be careful to not let the potatoes fall apart or burn.
