Soft Chicken Tender Katsu

For the breading, just dip the chicken in mayonnaise and mustard and then coat with panko!The mayonnaise makes the chicken soft and juicy.

Ingredients: Serves 2

Chicken tenders
1 tablespoon
1 teaspoon
as needed


1. Remove the sinews from the chicken tenders. Cut the chicken tenders diagonally into thirds.
2. Mix the chicken tenders, mustard and mayonnaise in a bowl. Let sit for about 30 minutes.
3. Place each chicken tender, one at a time, in the panko and lightly press to coat.
4. Line a baking sheet with parchment paper. Arrange the chicken tenders on the baking sheet and bake for 20 minutes at 200ºC. All done.
