Chicken and Tofu Burgers with Mushroom Ankake Sauce

Will anyone guess that these patties have tofu in them?! These healthy burgers are covered in juicy mushroom ankake (thickened sauce). They are great served with rice!

Ingredients: 4 people

Hamburgers:
Ground chicken
300g
Firm tofu
1/2 block
Onion
2 medium-sized
Egg
1
Katakuriko
1 tablespoon
Salt
1 teaspoon (to taste)
Soy sauce
1 teaspoon (to taste)
Pepper
a pinch
Mushroom An
Mushrooms
1/2 package
Dashi stock
1 cup
Mirin
2 tablespoons
Soy sauce
1 tablespoon
Salt
1/2 teaspoon (to taste)
☆Katakuriko
1/2 tablespoon
☆Water
1 tablespoon

Steps

1. Place all the hamburger ingredients into a bowl, and thoroughly knead until it sticks together.
2. Heat vegetable oil in a pan over medium heat, divide the hamburger mixture into 4 equal portions, shape into patties, and fry in a pan. Cover with a lid and cook for about 5 minutes over medium heat.
3. Flip the hamburgers, turn the heat down to low, cover with a lid, and cook for another 5 minutes.
4. Wipe off the excess grease with a paper towel, move the burgers to the side, add the mushrooms, and saute. Add the rest of the ingredients aside from ☆, and bring to a boil.
5. Mix ☆ with a spoon, and add to the pot to thicken. Arrange on a dishes, garnish with green onions, and you are done.
6. This is a shiso leaf version. It is refreshing, and I recommend you try it this way too!
