The Taste of Autumn! Dense and Delightful Sweet Potato Gratin

Here is a sweet potato version of my Halloween Kabocha Gratin.

Ingredients: 2 servings

Sweet potato
1 (250 g)
Onions, finely chopped
1/2
Bacon, minced
30 g
Plain soy milk
100 ml
◎ Salt and white pepper
to taste
◎ Parmesan cheese
1 tablespoon
Olive oil
to taste
Pizza cheese
to taste

Steps

1. Cut the sweet potato lengthwise in half, wrap in plastic wrap, then microwave for 5 minutes at 600W.
2. Scoop the inside with a spoon and mash with soy milk.
3. Heat olive oil in a frying pan, sauté the onion and minced meat, add the sweet potato from Step 2, add ◎ ingredients and lightly sauté until the texture becomes slightly heavy.
4. Stuff the potato skin with the mixture from Step 3, top with pizza cheese, then bake until crisp in a toaster oven and serve.
