Simple Mapo Tofu

My husband and kids love this dish! You can adjust the spiciness of mapo tofu if serving to kids.

Ingredients: 3-4 servings

Firm tofu
1 block
Minced pork
120 g
White part of Japanese leek
half
Carrot (optional)
half
Garlic
1 clove (if using a tube of grated garlic, about 2 cm)
Katakuriko slurry
(1 teaspoon of water and 1 teaspoon of katakuri starch)
Seasonings
Tianmianjiang
1.5 tablespoon
Chinese chicken soup stock (powder)
1 teaspoon
Soy sauce
1 teaspoon
Sake
1 teaspoon
Water
1/2 cup
Doubanjiang (optional)
About 1 teaspoon

Steps

1. Drain excess water from the tofu for half a day.
2. Combine the seasonings.
3. Heat vegetable oil and fry the garlic gently to bring out the flavor.
4. Add the pork and carrot and stir fry.
5. After the meat is cooked through, pour in the mixed seasonings. Simmer to let the meat absorb the flavor.
6. Add the tofu and leek to simmer. It's done.
7. My kids (3 year-old and 1 year-old) who love dishes seasoned with tianmianjiang, finished off the plate when I added blanched komatsuna to the dish!

I wanted to create a mapo tofu that my kids can eat.
