Sparkling Candied Grapefruit Peel

Sparkling Candied Grapefruit Peel

You can make candied grapefruit peel using the same steps for making candied orange peel.
Save time by drying your peels in the oven.

Grapefruit peel
1 whole grapefruit
same weight as the peel
half the weight of the peel
Granulated sugar for finishing

1. Wash the grapefruit by rubbing with salt. Rinse with water. (This is to remove any anti-mold agents.)
2. Peel the grapefruit together with white pith. (The white pith wasn't bitter at all when cooked. It's your choice.)
3. Julienne the peel. Weigh the peel here. (Recipe ID: 1522213)
4. Put the peel from Step 3 in a pot and add plenty of water (not listed). Turn the heat on.
5. Change the water when it boils. Repeat 3 times. This will eliminate the bitterness.
6. Put the peel from Step 5, sugar and water in a pot, bring to a boil and simmer for about 30 minutes. Turn off the heat once the peel becomes translucent and a syrup forms.
7. Drain the excess juice, and place the peel on a baking sheet. Dry in a 210°F/100°C oven for 30 minutes.
8. Sprinkle with granulated sugar while it's still hot. You're all done!
