Slice the potato, soak briefly in water then microwave until soft.
Add the sugar, heavy cream and salt, and mash the potatoes.
Using an ice cream scoop, take one scoop of the potato paste and shape. Repeat the process.
Brush the surface with an beaten egg yolk and bake in the oven until golden brown.

I wanted to make this easily.
By slicing the sweet potatoes, it cuts the fibers and becomes smooth. Soaking the slices briefly in water before microwaving prevents over drying. Bake at high temperature with short amount of time and cover with aluminum foil after baking until cools for soft and moist sweet potato bites.
