Pacific Saury and Horse Mackerel Bone Crackers in the Microwave

These are non-fried bone crackers. They make a great calcium-packed drinking appetizer. You can also make delicious bone crackers using horse mackerels or sardines.

Ingredients: 2-3 servings

Fish backbones
2-3 fish worth
Shiso leaves
as needed
Sudachi citrus
as needed
to taste


1. When you filet Pacific saury, sardine, or horse mackerel, keep the backbones. Cut the backbones into pieces.
2. Wipe off the excess water with a paper towel. Line a plate with the paper towel, arrange the backbones on the towel, and lightly sprinkle with salt.
3. Microwave for 1 minute.
4. Remove them from the microwave, flip them over, and lightly sprinkle with salt again.
5. Microwave again for about 1-3 minutes until they become crispy.
6. Arrange them on top of shiso leaves on a plate, serve with sudachi citrus fruit, and they're done ♪
