Place the bowl on a scale and add the cake flour, katakuriko, baking powder, sugar and salt. Remove from the scale and use a whisk to mix in a circular motion.
Add the egg and mix.
Put the bowl back on the scale and add the listed amount of milk. Remove, mix, and add vanilla extract if desired.
Once everything has been mixed together, warm a frying pan over a low-medium heat and coat with some some vegetable oil (or butter). Drop the batter into the pan in rounds.
Once the top starts to bubble, turn over. Cook on both sides to golden brown.
If you can insert a skewer into the pancakes several times and it always comes out clean, they're done. Serve with butter and syrup.

Measure the ingredients as you go along. If you use a whisk and mix in a circular motion in Step 1 you can incorporate a lot of air into the batter. If you use a lot of oil or butter when cooking, it gives them a really nice fried texture and will be even more delicious. The centres are soft and fluffy.
