Meat sauce (Recipe ID: 1532685) (Store-bought is also fine!)
Green bell peppers and eggplants
2 of each
Salt and grated cheese
Hot cooked white rice
Put a little oil in a pan, then stir-fry the garlic slices over low heat. Once they become fragrant, add the minced green pepper and eggplant and stir-fry.
Once the bell pepper and eggplant are soft, sprinkle on some salt and add the rice. Combine gently. Heat the meat sauce in the microwave.
Put the fried rice on a plate, then pile a generous amount of meat sauce on top. Sprinkle on grated cheese and it's done.
Story Behind this Recipe
I made this recipe as a way for my kids to eat the vegetables that they normally wouldn't eat served individually.
I used meat sauce made in advance. This can be easily made with store-bought sauce, so it's handy for times when you need a quick lunch. Stir frying the vegetables and the rice together, then placing the meat sauce on top prevents the dish from becoming too pasty.
