This beautifying soup is made with Chinese goji berries, which help supplement iron supply, maitake mushrooms, which help the respiratory system, and chicken drumsticks, which are filled with collagen.
Chicken drumettes - the first (thickest) joint of a chicken wing
1 cup (200ml)
Dried herbs (marjoram, oregano)
These are the dried goji berries. You can also use them dried in desserts. I used these for this simmered dish.
Season the chicken drumsticks with the dried herbs, salt, and pepper. Marjoram helps with digestion.
Cut the onion into 5mm slices. Wash and tear apart the maitake. Chop the tomatoes. You can leave the skin on or peel, whichever you prefer.
Heat olive oil in an enamel pot. Add the chicken drumsticks and cook lightly. When the chicken begins to lightly change color, add the water.
Cover with a lid and leave it until it begins to boil. Once it begins to boil, drop the heat to low.
Add, in order, the tomato, maitake mushrooms, and goji berries. Cover with a lid and simmer for 15-20 minutes.
Season with salt, pepper, and soy sauce. Stop the heat and let it steam for a short time to finish.
Garnish with digestion aiding and mineral filled parsley and then enjoy. The chicken will become so tender and delicious. You can also enjoy the goji berries.
Story Behind this Recipe
I am currently researching medicinal recipes.
Since this is a medicinal dish, the flavor and looks don't appeal to children. This soup is made with ingredients that are great for when you are on your period or going through menopause. Goji berries are a better dried fruit than raisins, which is why I recommend them.
