Pierce the chicken breast several times with a fork, and slice on the diagonal into bite size pieces. Season with salt and pepper.
Peel the garlic and crush it.
Put the ingredients marked ＊ (plain yogurt, mayonnaise, soy sauce, mirin, garlic) in a plastic freezer bag. Add the chicken and massage over the bag to help the flavors penetrate.
The remaining yogurt will be used to make a sauce.
Marinate the chicken in the refrigerator for 30 minutes.
Heat some oil in a frying pan, and pan fry the chicken.
Start at high heat to brown the meat, then lower to continue cooking it through.
When both sides are golden brown and the chicken is cooked through, it's done!
I made a sauce with the remaining yogurt.

Start cooking the breasts on high heat in order to give them a mouth-watering golden brown color. Drain off as much moisture as possible at Step 4 to give it a nice golden brown color.
