Dense * No-Bake Cheesecake

This is an authentic-tasting cheesecake that's incredibly easy to make. It's made with cream cheese, so it's slightly high-calorie, but it's also delicious.

Ingredients: one 18 cm round open-bottom tin or ramekin

Cream cheese
200 g
60-70 g
Heavy cream (low-fat is OK)
200 ml
Lemon juice
1 lemon (2 tablespoons' worth)
Lemon zest
1/2 lemon
80 g
Melted butter
40 g
8 g
3 tablespoons


1. Add some biscuits to a plastic bag and crush them into fine crumbs. Then add in some melted butter, mix everything together in the bag, and pack it into the bottom of the cake mould.
2. Let the cream cheese return to room temperature. Or cover it in cling film and microwave for 30 seconds.
3. Place the gelatin in a heat-resistant container and soak it in water.
4. Add the sugar into the bowl from Step 2 and beat together with a whisk until creamy.
5. Dissolve the gelatin by heating it in the microwave for 20 seconds. Pour the heavy cream into a separate bowl and whip it until soft peaks form.
6. Mix the gelatin into the bowl from Step 4. Then add in the lemon juice and lemon zest and mix briskly.
7. Lastly, pour in the whipped cream and mix it together with everything else. Pour the mixture into the mould from Step 1, even out the top, and leave to chill and set in the refrigerator.
8. When set, remove the cake from the mould, cut it into slices, and pour over your choice of sauce.
9. You can also try lining the bottom of the mould with a layer of sponge cake if you'd prefer.
10. If you make the cheesecakes in small ramekins, you can eat them at your leisure.
