Wash the sweet potatoes, cut into 1-cm thick rounds, then soak in water for about 15 minutes. After soaking, drain in a colander.
Place the sliced sweet potatoes on a microwave-safe plate and cover with plastic wrap to microwave until tender.
Heat oil in a frying pan, then add the sweet potatoes, frying both sides, then remove from the pan. Remove potatoes with chopsticks or tongs, leaving the oil in the pan.
Spread sugar into the pan through a sieve.
Heat on medium until the sugar starts to brown, then agitate the frying pan until evenly browned. Return the potatoes to the pan, then coat in sugar.
As you coat, it should caramelize and form strings of sugar.

In Step 3, adjust the heat to your liking. In the photo shown in Step 4, the sugar has melted where the oil remained in the pan. In Step 5, don't use chopsticks or a spatula to mix while agitating the pan. I used a frying pan with a non-stick coating.
