Cold Tonkotsu Ramen with Dipping Sauce

You can make tonkotsu style soup with soy milk. This dish is very easy, just like cooking instant noodles. Great for hot days.

Ingredients: 2 - 3 large servings

Dipping sauce
Soy milk
400 ml
Dashi stock
300 ml
1/4 scant teaspoon
Chicken stock granules
2 teaspoons
Oyster sauce
2 teaspoons
Soy sauce
2 teaspoons
Grated garlic
1 1/2 teaspoons
2 tablespoons
2 tablespoons
Sesame oil
1/2 tablespoon
to taste
Your favourite ingredients♪
Noodles (Chinese noodles, somen noodles, udon noodles, etc)
2 ~ 3 servings
Seasoned eggs (Recipe ID: 1487397)

Seasoned wood ear mushrooms (Recipe ID: 1488301)
as needed
Char siu (Recipe ID: 1690148)
as needed
Green onions, shredded nori seaweed, ground sesame seeds, cabbage, shiso leaves, cucumber, tomatoes, etc
to your liking


1. Add all the soup ingredients into a pot, and turn on the heat to medium. When the edges start to bubble, simmer while stirring. Do not boil.
2. Plunge the pot in ice-cold water to cool. Put in the fridge to chill, and the soup is done.
3. Boil the noodles, wash under running cold water, and soak in ice-cold water to give the noodles a chewy texture. Drain the excess water, and serve in a bowl
