Nutritious Matcha and Sweet Black Bean Tofu Cake

A cake that uses tofu, but no butter. It's moist and tasty. A delightful addition of matcha and sweet black beans.

Ingredients: Makes 1 pound cake

Tofu (Silken)
300 g
Cake flour
200 g
Sugar
60 g
Egg
1
Baking powder
5 g
Matcha
1 teaspoon
Sweet black beans (cooked)
70 g

Steps

1. Whisk together the tofu (as is, without draining) and egg with a hand mixer until smooth.
2. Add sifted cake flour, sugar, baking powder, and matcha to the tofu batter from Step 1, and thoroughly stir with a rubber spatula.
3. Pour the batter from Step 2 into a greased pound cake mold, and bake for 45 to 50 minutes in an oven pre-heated to 180℃.
