Fluffy and Thick Pancakes

These are myy favourite pancakes for breakfast.
They puff up so well!

Ingredients: 3 pancakes

Cake flour
100 g
Baking powder
4 g
30 g
70-80 g
Vanilla extract
a small amount


1. Crack eggs in a bowl and add sugar. Mix well.
2. Sift the cake flour and baking powder into the bowl.
3. Combine lightly and add milk for a thick consistency.
4. Allow the mixture to retain some lumps as this makes the pancakes puff up more easily! Also, less milk is better.
5. Add vanilla essence if you like.
6. Heat a small amount of oil in a frying pan. Once hot, remove the frying pan from the heat and place on a wet kitchen towel to reduce the temperature.
7. Return it to low heat. Ladle one scoop of the mixture from a high position onto the frying pan.
8. Cook for about 2 and a half minutes, until bubbles appear on the surface. Flip over.
9. Now cover the pan with a lid for about 2 more minutes.
10. The pancakes should cook through to the middle.
