Yuzu Flavoured Tofu Mayonnaise

When I first started making this, I used to drain the water from the tofu properly, but since I make it so often now I just stick everything in the blender.


Firm tofu
1/2 block
Yuzu jam
1/2-1 tablespoon
Yuzu pepper paste
1/8 teaspoon
White miso
1/2 tablespoon
Rice vinegar
1/2 teaspoon
Lemon juice
1/2 teaspoon
Shio-koji (or 1/2 teaspoon salt)
1 teaspoon


1. Place all of the ingredients into a food processor and blend! You're all done. This mayo has a slightly sweet flavour from the yuzu jam so it goes great on toast and such as well as salads ☆
