Bill's Restaurant Style Soufflé Pancakes

Bill's Restaurant Style Soufflé Pancakes

These are fluffy pancakes that taste like the ones I ate at Bill Granger's restaurant. I used yogurt in place of ricotta cheese!

Ingredients: 2~3 servings

○Cake flour
80 g
○Baking powder
5 g
Egg yolks
Egg white
40 g
Soy milk (or regular milk)
100 ml

1. Sift together the ○ ingredients.
2. In a bowl, mix together the egg yolk, the sifted ingredients from Step 1, the baking powder, yogurt, and soy milk.
3. Put the egg white in a bowl and whip well until soft peaks form to make the meringue.
4. Add the meringue to the bowl from Step 2 and being careful not to smash the meringue, gently mix to incorporate throughout the batter.
5. Melt a little butter in a frying pan and cook the pancakes on a low-medium heat on each side for 1:30-2 minutes. Adjust the time according to the size of your pancakes.
6. The batter isn't too sweet, so garnish with powdered sugar, maple syrup, pancake syrup, honey, etc. They're also great with fruit!
