Simple Tom Yum Pho

Although the real deal is super spicy, I combined a mildly spicy tom yum soup with pho noodles. Bon appetit!

Ingredients: 2 servings

Pho (rice noodels)
as much as you can eat
Shrimp (I used Black Tiger)
Green onions or scallions
5 stalks
Red onion
Bean sprouts
50 g
Straw mushrooms (or brown or white mushrooms)
to taste
★ For the soup ingredients:
500 ml
1 tablespoon
Lemon grass (or lemon juice)
1/2 stalk (or 2 teaspoons)
1 teaspoon
Fish sauce
2 teaspoons
Sugar if it turns out spicier than desired
to taste
☆ For garnish:
Cilantro (optional)
to taste


1. Soak the pho in water. De-vein the shrimp and make a cut down the spine (so that it will open up when cooked).
2. Chop the green onions or scallions, red onion, and straw mushrooms.
3. Make the soup with the ingredients listed under the ★, add the seasonings, then add the pho and chopped ingredients.
4. Garnish with cilantro, then serve.

My Nepalese friend taught me this dish and I arranged it to match Japanese taste. I was surprised how easy it is to make!
