Cut potatoes into large bite sized pieces and boil them in water with sake. Test with a skewer, and strain potatoes when skewer pierces all the way through.
Add butter and heat on medium flame. When the butter melts, add soy sauce and honey, and simmer.
Agitate the pan to coat the potatoes in soy sauce.
Serve when the liquid has completely simmered away.
Story Behind this Recipe
This is my aunt's recipe. Japanese-style potato tumbles are also tasty, but sometimes it's nice to add the butter for a different touch.
Adding sake to the water before boiling prevents the potatoes from breaking apart. But the best method is to be careful not to over-boil them. Season lightly, then add butter, soy sauce, and honey to taste.
