Easy Homemade Nametake (Preserved Enoki Mushrooms)

Just put the enoki mushrooms in the flavoring ingredients and simmer!


Enoki mushrooms
1 bunch (a large one)
★ Soy sauce
2 tablespoons
★ Sugar
1 tablespoon plus 1 teaspoon
★ Sake
2 tablespoons
★ Dashi stock granules
A small amount
If the enoki mushroom packs are small, use 2 packs.


1. Take the root end off the enoki mushrooms, and cut the rest in half.
2. Shred the mushrooms into small clumps, and rinse quickly in water.
3. Put the enoki mushrooms and the ingredients marked ★ in a pan, and turn on the heat.
4. Simmer over medium heat while stirring and reducing the liquid.
5. When it has a nice appetizing color, it's done!
