Sushi Vinegar Made from White Vinegar - Make  Japanese Cuisine Abroad

Wanting to make sushi with ingredients on hand, even while living abroad, I created sushi vinegar and sushi rice using Heinz brand white vinegar.

Ingredients: Sushi rice for 4 servings (3 rice cooker cups' worth)

Rice
3 rice cooker cups (540 ml, 450 g)
Water
3 and 1/4 rice cooker cups (About 590 ml)
Sushi vinegar
White vinegar
60 ml
Sugar
2 tablespoons
Salt
1 heaping teaspoon

Steps

1. In a pan, bring white vinegar, sugar, and salt to a boil, dissolving the crystals, then cool.
2. When using a microwave: Put the ingredients in a heat-resistant dish, and cook for about 1 minute, then cool. It should be hot enough to dissolve the sugar and salt crystals.
3. Cook rice to "al dente" firmness.
4. Once the rice is done, mix in the sushi vinegar while the rice is still hot. Fold in the vinegar to avoid crushing the rice grains.
5. When using Japanese rice vinegar, use 80 ml vinegar. The amount of sugar and salt should remain the same.

Story Behind this Recipe

When I couldn't get any Japanese grain vinegar, I made my own sushi vinegar using vinegar available abroad.
