It's Summertime! Chilled Corn Soup from Corn-on-the-Cob

When it's hot, how about a bowl of chilled corn soup? It's so easy and healthy!!

Ingredients: Serves 2

Corn
1 ear
For the seasoning:
Milk
1 cup (200 ml)
Boullion cube
1/2 cube
Bay leaf
1 leaf
Salt and pepper
To taste
Optional:
Parsley, croutons, or your favorite soup garnishing

Steps

1. Boil the corn for about 15 minutes.
2. When tender, remove kernels from the cob with a knife.
3. Heat the milk, bay leaf, and consomme bouillon in a pot on low heat, without boiling. Remove bay leaf when well heated.
4. Blend corn and soup stock evenly with a Bamix hand blender.
5. Strain to produce a creamy texture. Sprinkle with a pinch of salt and pepper to taste.
6. Chill well and add parsley or any favorite garnishing, and serve!
