Peanut Butter and Banana Muffins

These sugar and butter free muffins are easy to make. All you do is mix. Add chopped nuts to the batter if you like, and enjoy for breakfast or as a snack.

Ingredients: 8-10 muffins

Plain flour
1 cup (about 128 g)
Baking powder
1 teaspoon (5 g )
1 (large)
Ripe Banana
1.5 - 2
Soy milk (milk or water)
1/4 cup (60 ml)
Peanut butter
4 tablespoons
a small amount


1. Put all the ingredients except for the flour and baking powder in a food processor, and blend until smooth.
2. Put the mixture into a bowl and sift in the flour and baking powder. Mix everything together, taking care not to over mix.
3. Bake at 180ºC (350ºF) for 10-12 minutes. When a skewer poked through comes out clean, they are done.
