Crunchy Oatmeal Raisin Cookies

These are cookies with no butter, egg or sugar. Their mild sweetness comes from maple syrup and apples. Crunchy and addictive!

Ingredients: about 25 cookies

1 cup (200 ml)
Whole wheat flour
1 cup (200 ml)
30 g
1/3 teaspoon
☆ Grape seed oil (Olive oil or vegetable oil is also OK)
3 tablespoons
☆Maple syrup
3 tablespoons
☆ Apple juice
3 tablespoons
☆ Soy milk or water
2 tablespoons


1. Whisk the dry ingredients together in a bowl. Mix the ingredients marked ☆ in another bowl.
2. Add the ☆ ingredients to the bowl with the floury ingredients and add the raisins. Mix lightly with a rubber spatula and gather up into a ball of dough.
3. Let the dough sit in the fridge for 20 minutes.
4. Scoop the dough with a spoon and line the cookies up on a baking tray. Slightly flatten the surfaces.
5. Bake for around 20 minutes in an oven set to 180℃.

Story Behind this Recipe

I wanted to make cookies with crunchy oatmeal which don't contain any eggs butter or sugar. I tried many times to get the flour combination right, and I think this gives the crunchiest results and the best texture.
