Chilled Spaghetti with Basil Sauce and Yogurt

Lightly-flavored chilled pasta is the best thing to eat when you've lost your appetite in the hot climate! Enjoy the refreshing tartness of the yogurt and lemon.

Ingredients: 1 serving

Cappellini pasta (spaghetti)
40 g
♠ Homemade or store-bought pesto sauce
2 tablespoons
♠ Plain yogurt
1 tablespoon
♠ Olive oil
1 teaspoon
♠ Lemon juice
1/2 teaspoon
Salt and pepper
to taste


1. Combine and mix all ♠ ingredients in a bowl. Season with salt and pepper depending on the flavor of the basil sauce. Chill in the fridge if you have time.
2. Boil some water and cook the pasta for a minute longer than indicated on the package. Rinse in running water to cool, then chill in ice water. When chilled, drain well.
3. Toss briskly with the prepared basil sauce. Taste, and season with salt and pepper (unlisted) if necessary.
4. When done, serve on a cooled dish from the fridge. Enjoy with some black pepper or lemon juice (unlisted) if you'd like.
5. For your information, here's the amount of water and salt needed to cook 1-2 servings of pasta: Hot water: 1000 ml. Salt: 10-20 g. You might only need half the amount of water for this particular recipe.

Story Behind this Recipe

Basil sauce itself doesn't blend well with the pasta, but I didn't want to add so much oil.
That's why I experimented with mixing in yogurt. It surprisingly added a rich flavor to the sauce and it was quite tasty.
This dish is also great as a side dish for a richer main dish!
