Farmhouse Recipe: Multi-Purpose Meat Miso

This versatile meat miso sauce goes well with fried eggplant, zucchini, or raw cucumber.


Ground pork
200 g
Red miso
100 g
5 tablespoons
4 tablespoons
3 tablespoons
Grated ginger
2 pieces worth


1. Put a small amount of oil in a pan and stir fry the ground pork over medium heat until crumbly. Add the [A] ingredients and simmer it down.
2. Simmer over low-medium heat, until the sauce is sticky and shiny, and it's done.
3. Used as a topping on deep fried eggplant. The sauce has a sweet flavor so to stop with shredded shiso leaves. The shiso and meat-miso sauce go perfectly together.
4. Deep fried zucchini slices topped with the meat miso sauce and shredded shiso leaves.
5. The sauce goes well with raw cucumber too. Please give it a try.

Story Behind this Recipe

I've been using meat miso sauce on deep fried eggplant for some time, but I revised my standard recipe recently to add more sake and ginger, which makes it even more delicious.
