Kamukura-style Delicious Ramen

I made this because I love the delicious ramen served at Kamukura (a ramen shop based in Nara prefecture).
I think I got pretty close to the real deal.

Ingredients: serves 4

Uncooked ramen (dried ramen also ok)
4 packs
Chinese cabbage
as desired
Thinly sliced pork belly
About 150 g
1500 ml
Chicken soup stock (granulated)
2 tablespoons
Soy sauce
3 tablespoons
About 2 teaspoons
1 tablespoon
1/2 teaspoon
Grated ginger
1/2 teaspoon
Grated garlic
1 teaspoon
Sesame oil
1 tablespoon


1. Put the soup ingredients in a pot and bring to a boil. Cook on low heat while preparing the other ingredients. This is enough for plenty of soup.
2. While the soup is boiling, cut the vegetables in half lengthwise, and then into 2 cm pieces. Cut the pork into bite-sizes.
3. Add oil to a large wok and cook the ground pork. Once it changes color, add Chinese cabbage and cook on high heat. It's important to preserve its crispness.
4. Boil the noodles to the desired firmness.
5. Add cabbage and pork to the soup, and bring to a boil.
6. Put the drained noodles in a bowl, then top with the soup and serve. I added fried chives served Kamukura-style.

I love Kamukura's delicious ramen. I decided to reproduce it at home. My family loved it.
