Bring 1 liter (5 cups - 1000 ml) of water to a boil in a pan with a lid.
When the water comes to a boil, take it off the heat and add 200 ml (1 cup) of water, and put in the eggs. (You can put them in straight from the refrigerator.)
Now just wait with the lid on for 12 minutes! In the winter 13 minutes seems to work better!
After 12 minutes, take the eggs out right away and let them rest for at least 3 minutes. Break them open gently as you would with raw eggs.
Story Behind this Recipe
Homemade soft-set eggs are really best with this method. Put one on hot rice with a little soy sauce! Delicious!!
A thick-sided pot is best for this dish! If you can let the eggs rest after taking them out of the pot for 4 minutes, they'll be perfect!
My son and daughter both moved out recently, so it's just my husband and I...but you can make just 2 of these, and they'll come out fine. But recently I make 4 at a time and keep 2 in the refrigerator to use the next day.
