Flavored Wood Ear Mushrooms For Tonkotsu Ramen

You can use this on rice or in bentos besides on top of ramen. This wood ear mushroom dish is crunchy and delicious.


Dried wood ear mushrooms
about 10 g
1/2 teaspoon
☆Soy sauce
2 teaspoons
1 teaspoon
1 teaspoon
Ra-yu (or regular sesame oil)
1/2 teaspoon
Ground sesame seeds
2 teaspoons


1. Dissolve a pinch of sugar in water in a bowl, and rehydrate the wood ear mushrooms.
2. Squeeze out the rehydrated mushrooms well, and finely julienne. Combine with the ☆ ingredients.
3. Put the wood ear mushrooms and ☆ ingredients in a frying pan, and stir fry with ra-yu until there's no moisture left in the pan.
4. Mix in the ground sesame seeds to finish.
5. I used it on "Rich Tonkotsu Ramen."
