Refreshing Chicken Tenders with Grated Daikon Radish Sauce

I created this refreshing dish by steaming chicken tenders in sake in the microwave, then seasoning them with grated daikon.

Ingredients: 4 servings

Chicken tenders steamed in sake
2
Daikon radish
200 g
Green shiso leaf
2
Green onions or scallions
a small amount (about 10 g)
【A】
Yuzu pepper paste
1 teaspoon
Soy sauce
2 teaspoons
Ponzu
1 and 1/2 tablespoon

Steps

1. 【How to steam chicken tenders in sake in the microwave】For 4 pieces of chicken: coat the chicken with 1 tablespoon sake, put them on a heat resistant plate, then loosely wrap in plastic.
2. Microwave for 3 minutes at 500 W, then let sit for 3 minutes still wrapped.
3. After the tenders have cooled, they can be shredded easily by hand. Remove any tough tendons.
4. This is how to make the seasoned chicken tenders: Use 2 cuts of chicken tenders steamed in sake.
5. Finely shred 2 chicken tenders pieces, then chill. Peel the skin from the daikon radish, then grate.
6. Add the 【A】ingredients to the grated daikon, mix well, then toss together with the chicken from Step 5 with finely minced green onions.
7. Transfer to a serving dish, garnish with finely julienned shiso leaves and serve.

Story Behind this Recipe

I steam chicken tenders in sake in bulk; and this is one refreshing side dish that can be made with it.
Since I harvested a lot of daikon radish from my farm, I used grated daikon and homemade yuzu pepper paste.
