No-Bake Strawberry Cheesecake Mousse with Strained Yogurt.

No-Bake Strawberry Cheesecake Mousse with Strained Yogurt.

I made this rich strawberry dessert using strained yogurt. It's light, wobbly, and very delicious.

Ingredients: 8 servings

Strained yogurt
200 g
80 g
Heavy cream
100 g
Strawberries (fresh or frozen)
140 g
4 g
1 tablespoon

1. Strain the yogurt. Drain until the 400 g of yogurt is reduced to 200 g. I used Recipe ID: 760439 as reference.
2. Whip the heavy cream until thick, as seen in the photo. Chill in the refrigerator. Soak the gelatin in water.
3. Add the strawberries and sugar to a bowl and crush.
4. Add a little bit of the Step 3 mixture into the soaked gelatin and microwave for 15 seconds to dissolve.
5. Mix Step 4 into the bowl with the remainder of the Step 3 strawberries.
6. Thoroughly mix in the drained yogurt using a whisk.
7. Lastly, add in the whipped cream and lightly mix with a whisk, then switch to a rubber spatula and mix everything together.
8. Pour into the containers and chill in the refrigerator until stiffened.
9. Then they're done. You can decorate them with any kind of berries.
10. For a banana version of this cake, refer to Recipe ID: 1480566.
11. Note: The sauce in the photo is 20 g of frozen raspberries, 10 g of sugar, and 30 g of hot water, all mixed together, mashed, and filtered, then combined with 1 g of gelatin.

Story Behind this Recipe

I had a bunch of frozen strawberries leftover.
