Our Family Recipe For Sweet Vinegar Sauce

This is the homemade version of our favorite commercial brand of sweet vinegar sauce. I think it's pretty close to the original.


Aged rice vinegar (high quality is best)
300 ml
Sugar (sugar cane crystals are best)
8 tablespoons
2 tablespoons
1 tablespoon
Kombu for dashi stock
5 cm square
1 teaspoon


1. Wipe the kombu with a dry towel or paper towel.
2. Put all the ingredients in a pan and bring to a boil over high heat. Turn down the heat to low and simmer for 2 minutes to take the edge off the vinegar. Cool, transfer to a container and keep in the refrigerator.
