Remove the seeds from the pickled plums and use a knife to make them into a paste.
Cut the baby cheese in half.
Wrap a cutting board with plastic wrap, place the chicken tenders with the sinews removed on top, and cover with plastic wrap. Smack it with a rolling pin to even out the thickness.
Place the shiso and pickled plum on top of the chicken and fold it in half.
Top the chicken tenders with the shiso and pickled plum and fold in half. Sprinkle with katakuriko.
Coat a frying pan with vegetable oil. Fry until golden brown on both sides, and they are done.
Story Behind this Recipe
I thought up something healthier than fried cheese chicken tenders. Note: this is even easier to make if you use pre-cut baby cheese.
Covering the chicken tenders with plastic wrap and smacking with a rolling pin to spread them out will be easier than cutting them open. I recommend cheese sandwiches for the kids, and pickled plum sandwiches for the adults. I like to eat these a little cold rather than freshly cooked so I often make them as a side dish for bentos.
