Pickled Plum & Cheese Chicken Tender Sandwiches ☆☆

These are simple to make. They taste great even cold, so they are perfect for bento lunchboxes!!

Ingredients

Chicken tenders
10
Green shiso leaf
10 leaves
Umeboshi
3 large
Babybel cream cheese
3 small pieces
Katakuriko
as needed
Vegetable oil

Steps

1. Remove the seeds from the pickled plums and use a knife to make them into a paste.
2. Cut the baby cheese in half.
3. Wrap a cutting board with plastic wrap, place the chicken tenders with the sinews removed on top, and cover with plastic wrap. Smack it with a rolling pin to even out the thickness.
4. Place the shiso and pickled plum on top of the chicken and fold it in half.
5. Top the chicken tenders with the shiso and pickled plum and fold in half. Sprinkle with katakuriko.
6. Coat a frying pan with vegetable oil. Fry until golden brown on both sides, and they are done.

Story Behind this Recipe

I thought up something healthier than fried cheese chicken tenders.
Note: this is even easier to make if you use pre-cut baby cheese.
